Fishing Creek Cider Co.

It's Like Champagne from Apples!

Fishing Creek Hard Cider

We are a very small craft cidery currently producing about 4,000 bottles of our unique hand-made sparkling hard cider each year. Our alcohol content varies a bit by batch, but is around 8.5% by volume. From bins of the finest North Carolina apples to sparkling cases of finished product, the father-and-son team of Michael and Anderson O’Brien hand-craft each bottle of cider right here on the eight-generation family farm in rural Edgecombe County.

Who Is Mr. Draughon?

Who Is Mr. Draughon?

Who is Mr. Draughon?   Most importantly, L.L. Draughon (pronounced “drawn”) was my great-grandfather. Lyman Latham was a gentle man, in every sense of the word, who ran this farm in its first heyday – the period when mules gave way to tractors. L.L. lived off the farm in the little town of Whitakers, about seven miles away, but drove a carriage pulled by a horse named Joe out to the farm each day to oversee the goings-on of the farm. His noon-time nap was taken in the small room upstairs that is now the office of the cider company. The husband of a devout Methodist, he was unlikely to have made any hard cider, but then just how many pies could great-grandma make from all those apples? Serve cold.  Enjoy with...

Our Process

Our Process

It all begins with the freshest apples… A batch of Fishing Creek Cider begins each fall as 1,000-pound bins of fresh, juicy North Carolina apples are hauled down the mountain to our facility here in Edgecombe County. Once washed, the apples are fed into our grinder where they are ground into a fine pomace. From there, the juice is pressed out using our water-powered European hydro-press. After pressing, the juice is pumped to our fermentation tanks where pectic enzymes are added to assure the clarity of the finished product. Next, using malic acid, the pH of the juice is adjusted to simplify the elimination of wild yeasts with the addition of a weak solution of potassium metabisulphite. Two days later, we pitch our chosen yeast (can’t tell everything!), and finally, we add food-grade ammonium sulphate as a nutrient for the yeast. The primary fermentation period is roughly two to three months at approx-imately 50 degrees F. At completion of primary fermentation, the juice is pumped off the lees and into...

About Our Cider… L.L. Draughon’s Fishing Creek Hard Cider is central and eastern North Carolina’s first and only commercial hard cider producer. We are also probably the state’s smallest winery, with our whopping 147-square-foot facility. But, what we lack in size, we make up for in quality and attention to detail. Each of the 4,000 or so bottles of cider made here annually is hand crafted by me and my son, Anderson, seventh- and eighth- generation North Carolina farm folk. From building our own grinder to retrofitting my great-grandfather’s’s old metal grain bin as our production facility, to sanitizing, filling, capping and boxing, we have our fingerprints all over each and every bottle. Now, you might wonder what we are doing in Whitakers rather than in Boone or Asheville? It turns out that years ago just about every farm in NC, including this one, had a collection of apple trees bearing apples that ended up in pies, jelly, sweet and hard cider, and yes, even harder stuff like apple...
